Wine Style: Dry, Red, Oaked. 2020 was a great vintage for wine grapes in Ontario and is becoming known within the Ontario Wine scene as the best year in a decade. Due to the consistent temperature and dry season grapes were able to reach full ripeness and create very rich, concentrated wines. We decided to oak these wines 50% in New French Oak and 50% in Neutral French Oak for 16 months. After this process, we put our wines through a bench test to create the best possible Bordeaux Blend from this vintage. We were able to combine 1 barrel of each the 3 varietals. After combining the three wines into a blend, we decided they could use a little something extra, so we barreled down the blended wine into New French Oak for another 4 Months. We then proceeded to bottle these 3 blended barrels one at a time, allowing for three unique wines due to different barrel evolutions. This is the third and last of this wine we have making it very special. We also only bottled a total of 300 bottles of this wine, making it rare.

Ageing Potential: Medium Range Ageing Potential. This wine tastes great right now but will continue to improve 10-15 years after bottling.
Tasting Notes: Pale ruby in colour. The nose is quite complex with fruit notes upfront of blackberry, cherry, and raspberry, barrel integration notes are quite prevalent with notes of vanilla, nutmeg, clove, milk chocolate and sweet tobacco and a hint of gingerbread at the finish. The complexities keep coming on the palate with the same combination of red berry fruit and dark berry fruit with the addition of strawberry, baking spice and some earthy notes. Tannins are still developing and acid will continue to drop making this wine a showstopper now and for years to come.

Tasting Notes: Deep golden colour shows its age. Nose has aromas of mango, grilled pineapple, honey, mead, and beeswax. On the palate, the acid is surprisingly fairly balanced for the amount of sugar there is. Juicy tropical fruit notes of guava, passionfruit, mang,o and pineapple make way for some honey complexity at the finish.
Food Pairing: Pineapple Upside Down Cake, Vanilla Ice Cream with Salted Caramel Drizzle. Guilty Pleasure

Tasting Notes: Deep garnet in colour with some browning on the edges due to age. On the nose the aromas of cassis, figs, prunes and raisins are very present. The palate is similar to the nose with the dried fruit notes as well and molasses and nuttiness. Very smooth wine for lovers or Port style wine and for those who don’t love the intense sweetness of some Port. There is acid balancing this wine in a great way.
